Dandelion
Taraxacum officinale
Vitamins A, B, C and D, Iron and Potassium
Use leaves for an infusion and the root for a decoction.
A tonic, diuretic and alterative. Stimulates liver. Cleanses the blood. Eases the bowel.
Infusion
Pour boiling water over dandelion leaves, cover the pot and allow to steep for 10-30 minutes.
Decoction
Add dandelion root to boiling water, stir well and cover. Simmer on low heat for 20-60 minutes.
Dandelion Salad
8 cups fresh dandelion leaves
1 head oak leaf lettuce
wheat sprouts
2 celery stalks
1/3 cup walnuts
1/3 cup grapes
1 apple
3 tablespoons sorrel
Dressing: yogurt, buttermilk, honey, olive oil and pepper
